Meat Loaf with Freshly Ground Spices
- Add Marjoram, Thyme, and Whole fennel seeds to mortar. Grind with Pestle until desired coarseness is achieved. Set mix aside.
- Thoroughly mix all remaining ingredients together in a large mixing bowl.
- Fold ground spices into meat mixture until evenly distributed.
- Form meat into a “loaf” shape and place in an electric fry pan lightly greased with 2 Tbsp of oil.
- Press a “cross shaped” channel into the top of the loaf and drizzle remaining oil into it.
- Cover and cook at 250 degrees for 2 ½ to 3 hours.
After one hour, add quartered baby red potatoes around the meat. Re-cover pan and cook for remaining time. Serve with a tossed green salad and your favorite dressing.
