    We use fennel seed in our cooking (both ground and whole). For a twist, pan roast a few before adding to a dish.

    Very aromatic. I use it to make jerky and to flavor pork.
    My family use to have it sent to us from relatives in Italy (by the pound) until it became expensive over there too.
    At one time Italy was the only source for what you call fennel pollen (I believe that it is actually the flower of the plant).
