Initially when I opened the package, the aroma was pretty nice. But once I worked with it, I discovered that this particular cumin seed was not the bright, fragrant variety I am accustomed to. Instead, it is the earthy, woody variety that is so common on grocery-store shelves.
I am certain there are cooks who prefer this variety of cumin. But I am not one of them.
Honestly, I would like to see more transparency in sourcing. Terroir is important. (eg. If I'm looking for a variety of cumin that evokes Spain and not Poland, I should be able to read that from where the product is sourced.)
In any case, if American Spice offered two varieties would be a great idea. Because to me, this is NOT the cumin I was looking for.
