Xanthan Gum
When you need to thicken, bind, or emulsify your gels, sauces, and mixtures, add xanthan gum. Used extensively in gluten-free baking, xanthan gum holds gluten-free ingredients together so that baked goods don't crumble.
Xanthan gum's fermented corn sugars are similar to the sugars found in corn syrup solids. You'll find xanthan gum in ice cream, sausage, yogurt, salad dressings, sour cream, and believe it or not- in makeup! For recipe ideas, pick up Gluten Free Cooking.
