White pepper comes from the seed of the pepper plant. Ripe red pepper berries get soaked in water for approximately a week in a process known as retting; while retting, the pepper flesh softens and comes off, removing what is left of the fruit. Then, processors dry the naked seed. White pepper has a slightly lighter flavor than black pepper, because black pepper contains different flavor components due to what is in the outer layer of the fruit, but not the seed, as in white pepper. Use ground white pepper in white chili, mashed potatoes, creamy soups, like mushroom and broccoli, and even in pickling.
