2 Quarts Ice Cold Water
26oz Pepperoni Seasoning Mix
4oz Encapsulated Citric Acid**
1oz Sure Cure (packet included with seasoning)
Grind meat through 1/8" plate twice. Mix cure with water and add to meat in mixer, mix 1 min. Add seasoning mix, mix until sticky, do not over mix. Add citric acid, mix no more than 1 min. Stuff into casings and smoke immediately.
**(If you do not use a cure accelerator like Encapsulated Citric Acid or Smoked Meat Stabilizer, then hold in a refrigerator for approximately 12 hours or overnight)
Blend of Salt, Spices, Corn Syrup Solids, Dextrose, Paprika, Sodium Phosphates, Sodium Erythorbate, Garlic Powder, less than 2% Silicon Dioxide (to prevent caking)
Use 26 oz of seasoning plus 1 oz of SURE CURE to 25 lbs of meat.
Use 52 oz of seasoning plus 2 oz of Sure Cure to 50 lbs of meat.
