What is Worcestershire Sauce and Powder?

While proportions vary, Worcestershire sauce's key ingredient is tamarind soaked in molasses. Anchovies layered in brine, garlic in vinegar, chilies, cloves, shallots, and sugar all settle together and mellow over two years with periodic stirrings. The mixture is sifted of solids, bottled to make the sauce, and then dried to make Worcestershire powder.

    I love this stuff! It works great in Dry BarBQ rubs, Cajun seasoning, soups and stews. We love "Chex Mix", especially the worcestershire flavor in the mix. The problem comes-in when you try to add extra liquid W-sauce to the mix. It makes the mix soggy and very difficult to dry. By using the W-mix I can increase the flavor without making the mix soggy. GREAT STUFF! I've had no caking problems.

    The Worcestershire powder really puts a bass note in a BBQ rub. I consider it my go-to secret ingredient. A little goes a long way - but it makes a really important impression in a classic BBQ rub.

    We use worcestershire sauce in much of our cooking. We go through it so fast that I wanted an alternative that wouldn't take up a bunch of shelf space. Worcestershire powder was the answer. It works perfectly as a direct replacement for the liquid. Mixed it with beef broth, add a dash of pepper and you have a delicious au jus.
