Tips for Making Sausage

Here are a few sausage-making tips that will help you make better links:

• Use fresh ingredients, including the spices! It’s common sense that will yield some zesty results.
• Use a variety of lengths for your sausages. Some can be skinny and longer while others can be plumper and short.
• Use the best meat you can afford. That, combined with fresh sausage casings, will provide consistency bite after bite.
• Use a pin to remove any air pockets you find in your filled sausage casing.
• Not all spices need to be finely ground. A little texture can make each bite into a link a bit more interesting.
• Take your time! It’s impossible to cook a homemade sausage too slowly.

Our Favorite Breakfast Sausage Recipe

Now that you have your sausage making supplies, try one of our breakfast sausage favorites:

• 2 teaspoons ground sage leaf
• 1 teaspoon ground black pepper
• 1/4 teaspoon ground marjoram
• 1/8 teaspoon crushed red savina flakes
• 1 pinch ground cloves
• 1 teaspoon salt
• 1 tablespoon brown sugar
• 2 pounds ground pork

1. Combine all ingredients, except the ground pork, in a bowl and mix well.
2. Place the pork in a larger bowl and add your mixed spices. Again, mix well. 
3. Insert the meat mixture into sausage casings. 
4. Fry, broil, or grill your breakfast sausage links until they are fully cooked.
